I'm a big fan of soup for the cold winter weather. I could make a meal of it everyday for lunch or dinner. Here's a yummy soup for the leftover turkey after the holiday. A great alternative to turkey sandwiches!

ingredients:
1 T. olive oil
1/2 c. chopped onion
2 t. minced garlic
1/2 t. oregano
1 t. dried parsley
2 t. chili powder
1/2 t. cumin
1 t. salt
4 c. water
3 zucchini, sliced 1/2" thick, halved
2 c. frozen corn
3 t. instant chicken bouillon
2 (14.5 oz.) cans diced tomatoes
1 c. salsa (your favorite brand)
4 c. shredded cooked turkey
2 (14 oz.) cans black beans, drained
1 c. sour cream

directions:
Heat olive oil in medium saucepan over medium heat. Add onion and garlic and cook until onion begins to soften. Set aside.
In crock pot, pour cans of diced tomatoes, drained black beans. Add salsa, water, turkey, zucchini, corn, sour cream, cooked onion and garlic. Stir until sour cream is well blended. Add chili powder, cumin, oregano, parsley, salt, chicken bouillon and mix well. Cook on low setting for 6-7 hours.

This soup is wonderful served with bread, tortilla strips, shredded cheese and avocado. Bon appetit!

I like to help birds in the winter and here is an easy homemade bird feeder that's fun for the whole family to create. Simply coat a pine cone with peanut butter, roll it in birdseed and hang in your yard. I provide several bird feeders in my yard, and this one is always wiped clean long before the others.

I've used this recipe now three years in a row and I'm never disappointed. It's easy and the cookies come out a nice crisp, buttery taste. This year, for convenience, I bought Martha Stewart's icing detailer in a squeeze container and generic sprinkles - both found on sale right now at Michaels and Jo-Ann Fabrics.

cream together:
1 c. butter
2/3 c. sugar
beat in:
1 egg
1 tsp. vanilla
add:
2 1/2 c. sifted flour
Mix until ingredients are well blended. Wrap dough in wax paper and chill 3 to 4 hours before rolling. Preheat oven to 350 degrees. Roll out on slightly floured surface and cut with cookie cutters. If using sprinkles, coat dough with desired amount. Bake for 13 minutes or until barely light brown at edges.

Here it is. The first completed potting table. I have always wanted a potting table, and after lots of searching have come up with a design I think is both beautiful and efficient. I employed my father-in-law to do the woodworking and I put the finishing touches of sanding and painting. After school today, I was in the process of changing the television to the usual requested Nickelodeon channel when Riley shouted out for me not to change the tv because she wanted to see what the lady was cooking. I left her to this and about 10 minutes later she came into the kitchen and announced she was going to draw the ingredients to the salad recipe she witnessed so we could make it tomorrow.

Here's an easy, yummy cookie recipe from a box cake mix. My dear friend, Mary, shared this recipe with me a few days ago, and I had to give it a try. They are a snap to make and delicious. Thank you Mary!

ingredients:
1 box cake mix (yellow or chocolate)
2 eggs
1/2 c. vegetable oil
1/2 c. chocolate chips
Mix all ingredients in a large bowl until blended. Drop by spoonfuls 2" apart on un-greased cookie sheet. Bake at 350 degrees for 10 min.

While daddy was in Utah at the Regional Soaring Competition, I took the kids and headed west to Carlsbad, California to get out the of 100+ degree weather we have in Arizona. We visited Legoland and the beaches. We had a marvelous time and it was hard to leave my home state and the temperatures in the 70's.

This is a part of Legoland called "miniland" where you will find cities in the USA displayed in mini form. It is amazing what you can do with Lego's!

Carlsbad is one of many ocean side towns along the coast. We visited the beach every day.

This is a wonderful summer salsa. The recipe is something my brother-in-law, Tim, came up with and was kind enough to share with me. It's great over salmon. I'm thinking the next time I make it, I may add firm avocados to it.

ingredients:

1 lb. strawberries, diced

1 cucumber, diced (peel cucumber, cut in half and spoon seeds out)

1 jalapeno

1 medium red onion

1/3 c. chopped almonds

1/2 c. sugar

1/2 Tbsp. crushed red pepper

1/2 tsp. salt

Mix all ingredients in bowl and add 1/2 tsp. water to dissolve sugar.

Enjoy!

the grand hike

Hiking the Grand Canyon's South Rim is an incredible adventure. My good friend, Diana, and I hiked Hermit trail to Dripping Springs this past weekend. Hermit trail is one of the more moderate hiking trails, not maintained by the park and is steep, rocky and demanding in both directions. It's approximately seven and a half miles from the start of Hermit trail to Dripping Springs, round trip. The hike in is pleasant, but a tough workout. The hike out is tortuous. We didn't know if we wanted to crawl or cry. Having completed it, there is a sense of fulfillment and we are already planning to hike again next year on another trail going a bit further into the canyon this time.

I was feeling a bit crafty this weekend, and thought I'd give a try at making an apron for gardening purposes. Would you believe I made this apron from a tea towel? I found a great tutorial at http://calamityjanescottage.blogspot.com/ I followed her directions, but substituted 1" ribbon for the tie and loop (remember, I'm all about making it easier) and I added a metal key clasp. slow cooker bbq pork

It couldn't get any easier than this. Crock pot cooking is the best! Throw everything in, and viola! you have a meal ready when you get home from work.

ingredients:

3 lb. boneless pork shoulder roast

1 (12 oz.) can cola

18 oz. BBQ sauce (your favorite...I like KC Masterpiece, honey)

Place pork roast in crock pot. Pour cola over it. Cook on low for 9-10 hrs. When done, drain all liquid from crock pot and pull pork apart using a fork. Pour bottle of sauce over pork and mix well. Add salt and pepper to taste. Cook in crock pot on low for another half hour or until sauce is warmed through. Serve on buns.

**depending on how you like your BBQ, you can add more or less sauce.

I love container gardening, especially here in Arizona because it allows me to move my plants around, away from the heat and direct sun if needed. I'm always looking for something different to plant in to make the arrangement a little more interesting. One find this weekend was this little red shoe shine carrier. It lent itself perfect for two favorite herbs, rosemary and parsley. As an experiment, I also planted the Peacock Echeveria in a teacup.

Sitting high up on a hill, this 60-ton frog-looking boulder can't be missed if driving on highway #89 in the desert town of Congress, AZ. It was first painted in 1928, and to this day continues to be maintained by local residents.

While living in Southern California, I got addicted to succulent plants. The sea air was very kind to them and they were happy in containers on the small patio. When we made the move to Arizona, I wanted to bring the plants along. I even sacrificed leg room just to fit them all in the car. I thought they should be fine in the desert sun, right? They're water-retaining, so they require very little water to flourish. Well, while most succulents are drought resistant, you can't forget to check on them more often in desert conditions. You see, they all died. We were in the mist of a six month home renovation and my time was stretched. Checking on plants was the last thing on my mind. So, today I set out to try again with the succulents. I love container gardening, and have stuck with a few of my favorite: vintage enamelware and home-made troughs. Wish me luck!

cooper ranch

Located in central Arizona, the Cooper Ranch dates back to the late 1800's, is comprised of 27,000 acres and managed by the establishing family. To get there you have to travel 17 miles on a dirt road from the nearest highway. My first thought while making the initial trip was, why would anyone want to live out here. Five minutes into my visit and I'm thinking why would anyone ever want to leave. This place is amazing. The Hassayampa River runs along the side of the house where horses, angora sheep, and cattle quench their thirst. Museum quality bronze art peppers the inside of the home, depicting the history of the ranch, crafted by daughter, Mary Cooper Hamill. A large journal stuffed with sticky notes and old photos lays upon a table telling the story of Cooper Ranch, one day to be published. Mr. Cooper (pictured below) is 82 years young and still working the ranch without missing a beat.

west fork oak creek

West Fork, just 9 miles north of Sedona, is a popular trail in the Coconino National Forest. You'll understand why when you venture alongside the meandering stream which outlines the trail along the canyon floor, all the while towering above you, stunning red and orange cliffs so prevalent in this part of the country. It's a rather easy hike, but be prepared to negotiate the crossing of the creek in several places along the pathway (26 times to be exact for our hike that day) by use of conveniently placed stones or fallen logs. Allow 2-3 hours to complete the 6 mile round-trip excursion, and for $8 you can park your vehicle in the parking area with restroom facilities.

I took the kids to the Wildlife World Zoo & Aquarium today. Not to worry, I won't bore you with animal photos, but I would like to share this image. This grand bird prefers peace, harmony and open space. I'll go for that. What I won't go for is a repeat visit to this zoo. They're charging $26.50 per person now that they added the aquarium, and it's not that great.

This easy creation will tantalize your friends and family's taste buds, and they'll think you slaved in the kitchen all day (It'll be our secret). The great thing about pesto is you can serve it warm or cold. Take note, most all ingredients are bought prepared. No grating cheese, no mincing cloves of garlic, no roasting a chicken. Here's my take on this: Yes, you could literally slave in the kitchen all day preparing the ingredients. You could also have your babies natural childbirth, but I say, "why"?

ingredients:
1 lb. Zita pasta (or your favorite pasta)
1 6oz. package grilled chicken strips (Tyson brand works)
1 7oz. pesto with basil (I like Buitoni brand found in the packaged cheese section)
4 strips bacon (sliced bits 1/4" thick)
2 t. minced garlic (I buy the already minced in a jar) 1/4 c. grated Parmesan cheese (I also buy this already prepared)
salt and pepper to taste.
Cook pasta in boiling water for 18min. While waiting for pasta to cook, saute bacon and garlic. When bacon is crisp, discard fat drippings and add chicken. Cook chicken with bacon until heated through. Set aside.
Drain pasta and place in large mixing bowl. Add 7oz. container of pesto, and mix well. Add bacon, chicken and 1/4 c. Parmesan cheese. Mix well. Salt and pepper to taste.
Serve with a green salad and garlic bread, or just eat it by itself.
**Even if you are cooking for two, prepare the entire 1lb. pasta. This is great the next day for lunch!

I love all things vintage. There's something about this bicycle which grounds me, conjuring up images of innocent times when we had less worries than global warming and when you could hop on your bike and ride 20 mi. without your parents having to worry where you were.

polaroid transfers

Polaroid Transfers have been around forever. I got my first glimpse of one way back in my high school days, and then fell in love with them all over again 10 years later when I stumbled onto a gallery exhibiting an artist's work. I'm immediately drawn to the nostalgic feel of the prints, or maybe it's the impressionistic look. As for the process, there's something exciting about the manipulation of a photo to achieve a different artistic aspect to photography. Each transfer results in a unique image. blazin' trails

The hiking outside of Prescott is awesome, specifically Granite Mountain. There are well maintained trails and a diverse landscape. This past weekend was great weather, even with a trace of snow on the ground. Riley and Rose are usually bringing up the rear, arguing who is in charge, singing chorus, or discussing what they would do if they saw a fox or mountain lion.

I've never had much interest in still-life photography. I rather like the spontaneity of a photo taken than "making" it. chef for a day....if only in my head

I love to cook. On occasion if I make a food that is delicious and simple, I may post it. No worries, I have no intention of turning this site into a cooking blog. I call this Pear Puff. Now, here's the deal. There may be an exact recipe out there like this. I'm not saying I invented this dessert, nor will I be going on tour to promote it. When I did a Google recipe search, I wasn't finding what I had in mind, so I compromised and came up with this.

ingredients:

1 Pepperidge Farm puff pastry sheet (thaw for 40 min. on non-stick cooking sheet)

2 pears, sliced (I like Bosc pears....ripe, but not mushy)

1/4 c. raisins (optional)

2 T. butter

3 T. honey

cinnamon sprinkle mix (1 t. cinn. w/2 T. sugar)

1 egg w/1 T. water)

Preheat oven to 400*. In a 9" fry pan, melt butter w/honey. Place sliced pears and raisins in pan and saute for 5 min. On pastry sheet, arrange pears slightly overlapping - leaving a 2" edge around square puff. Turn up edge to form a barrier. Brush edge of crust with egg batter. Sprinkle cinnamon mix on entire dessert, not forgetting edge and just enough to lightly cover all.

Place in oven on middle shelf and cook for 25 minutes.

This is great warm with a scoop of vanilla ice-cream, but even more delicious the next day for breakfast w/coffee!

One of my favorite things to do is photo tinting, and thank you Photoshop! I remember the days of hand-tinting black and white photos using paints and a brush. It's way easier using Photoshop, although still tedious. This photo of my daughter from yesterday's hike offered itself as a perfect opportunity. The walking stick she holds had just the right design and amount of color screaming to be tinted.

When I was a little girl, I loved the days my mom would bake. I would hang around the kitchen for what seemed to be for hours "helping" her, just to get the chance to lick the cake batter from the bowl. However, my brother (the only boy of eight kids) would always manage to make it into the kitchen just in time for the licking to begin, and take most of it.

Well, Riley's solo bowl-licking days are numbered. Ian's not ready to lick the bowl yet, but he thinks he will be ready soon.

It's not easy being my model in high demand, but believe me, she's a high-maintenance model. Whenever I want to photograph her, she gives me a list of demands and limits my images. Most times, she will state the exact number of photos she will pose for. On this day, I was allowed one!

Paris in the fall is a great time to visit. The crowds are gone and the colors along the Seine River are beautiful. Here are a few images from our 2008 European vacation.

My favorite time of year is fall. The days have cooled, the foliage offers a brilliance of changing colors, whiffs of cinnamon and apple cider fill the air, and a new year beckons. I'd like to share a few photos of my first born sharing this season.

I had a short visit from my BFF, Rose, and she brought along her grand-daughter, Meagan. I can't resist a new face. I just love the photos of Meagan wearing the hat. Every time I look at it, I feel I'm looking at a cover of a ski magazine. What a cutie!

My daughter, Riley, had lots of fun playing with her little friend next door. It was her first real friendship, which sadly came to an end when Jacob moved away to Tennessee last week. Here are a few photos of Riley and Jacob with his "Paul Newman" eyes. Riley misses you!
